Lab Batches 76–78: Building the Dream Product from Flavour to Function Part 1

In my garage chocolate lab, every new run is more than just another recipe — it’s a structured experiment. For Lab Batches 76, 77, and 78, I’ve taken what I call the 8 Pillars of the Dream Product and applied them to two unique products: DARK DELIGHT and CHARGE. This blog is the first part of that story.

The 8 Pillars of the Dream Product

Each product I develop must deliver across these eight dimensions:

  1. Flavour (indulgent, layered, satisfying)
  2. Melt-in-the-mouth texture
  3. Purity & natural ingredients
  4. Daily nutritional support
  5. Foundational health (inflammation, gut, cognition)
  6. Functional energy & satiety
  7. Lifestyle fit (supports daily living needs)
  8. Freedom from traditional boundaries

DARK DELIGHT: An Evening Indulgence

Dark Delight is designed as an after-dinner treat. It goes beyond “no sugar added” chocolate by delivering indulgence that rivals the best in the market.

  • Flavour & Texture: Combination of cocoa beans, nuts (almonds, hazelnuts, pecans), coconut, and monk fruit, fine-tuned with spices like cinnamon, nutmeg, turmeric, and ginger.
  • Health Support: Rich in magnesium for relaxation, omega-3 from chia for mood balance, and polyphenols for cardiovascular and cognitive benefits.
  • Mood & Calm: Designed for winding down, with strong anti-inflammatory support (4:1 omega-6 to omega-3 ratio) and stress-reducing nutrients.

CHARGE: Morning Energy Without the Crash

CHARGE is my personal go-to before cycling or walking. It supports intermittent fasting and clean morning energy.

  • Ingredients: Macadamia (monounsaturated fats + omega-7), coconut flakes (natural MCTs), chia, cocoa, coffee, monk fruit, and vanilla.
  • Primary Function: Quick ketone release for energy + satiety that carries you to your first meal at 11am.
  • Cognitive Edge: Coffee and cocoa deliver mild caffeine and theobromine for smooth focus without jitters.
  • Secondary Benefits: Gut microbiome support through soluble fibre, anti-inflammatory omega-3s, and heart health through monounsaturated fats.

The Process Matters

It’s not just about mixing ingredients. Each nut or seed must be roasted optimally; each component is its own “instrument in the orchestra.” Grinding, conching, and balancing take 24 hours or more for small batches. The harmony of flavour, texture, and functionality is only achieved when all eight pillars align.

Looking Ahead

This first blog marks the beginning of Lab Batches 76–78. In the coming parts, I’ll share the production process, flavour evaluations, and the final results of this iteration. The journey is iterative — one step closer to the ultimate dream product.
