The 8 PILLARS of the perfect food: INDULGENCE MEETS PURPOSE

This is the place where I’ve always had the most fun. It’s also where my journey into chocolate began back in 2009.

Sixteen years ago, I didn’t just learn how to make chocolate here — I also built the machines to do it. Over the years, I’ve used many other machines, but none of them gave me the same quality or joy as the ones I built myself. Being back here now feels like coming full circle, and honestly, it feels good.

I’m not a trained chocolatier. Everything I know, I taught myself. And in the process, I became more than just a chocolate maker — I became a product developer.

We started small, working with single origin chocolate. I experimented with over 40 different cocoa bean origins from around the world and released several of them successfully. From there, we built a full range:

  • Dark chocolates sourced from African cocoa beans
  • Milk and white chocolates
  • Chocolate truffles, filled chocolates, and enrobed ganaches
  • Ice creams made with our chocolate
  • Coffee that I roasted and served in our own café
  • Nut butter chocolates inspired by Italian gianduja
  • And later, a range of no added sugar chocolates for low-carb and keto lifestyles

Each new product came from curiosity, a bit of stubbornness, and a love for creating something better.

Always Chasing the “Dream Confection”

One thing I noticed over time: every product we released was good, but I always felt we could make it even better. That feeling stuck with me, and eventually, I started building a picture in my mind of the dream confection.

To me, this dream product needs to rest on eight pillars:

  • Flavor – Always number one. If it doesn’t taste amazing, nothing else matters.
  • Texture and mouthfeel – Chocolate is famous for melting at body temperature. That magical release of flavor is what makes it unforgettable.
  • Natural ingredients – No artificial flavors or chemicals. Pure and simple.
  • Nutrition – Low carb, high fiber, with a healthy balance of fats (omega-6 and omega-3) and packed with minerals and vitamins.
  • Foundational health – Supporting insulin sensitivity, gut health, energy, mood, and cognitive function.
  • Functionality – A product that supports your lifestyle, whether it’s a treat, part of your diet, or fuel for endurance sports.
  • Breaking boundaries – Going beyond traditional categories like “chocolate,” “nut butter,” or “energy bar.” Why not bridge them?
  • Form matches function – The way you eat it should match what you need it for. For example, a truffle after dinner, a nut butter for endurance events, or a bar as a quick meal replacement.

It’s a big challenge to bring all eight together, but that’s the road I’m on now.

Why I’m Starting Again?

At the beginning of 2024, I committed to a low-carb, high-fat diet. It wasn’t long before I missed my after-dinner chocolate. I tried “no sugar” options on the market, but most contained sugar alcohols like erythritol. Not only did they upset the gut, but they didn’t taste great either.

That’s when I decided to create my own — something low-carb, without sugar alcohols, but still indulgent and satisfying. From there, my experiments grew.

For keto fasting, I wanted a product that gave satiety and carried me through to late morning.

For endurance sports, I needed a product that worked with my cycling and hiking without draining energy for digestion.

For the afternoon slump, I wanted a product that gave me a boost without sugar crashes.

What started as one chocolate fix turned into a whole range of products, each built on the same core ingredients but designed for different functions in daily life.

I won’t give away the exact products yet — they’re still in development. But here’s my promise: I’ll share updates as I go, right here on this blog and on my YouTube channel.

My hope is that this journey will inspire you, maybe even get you excited to be one of the first to taste these new creations when they’re ready.

This is more than just chocolate. It’s about building something that tastes incredible, supports health, and pushes past the boundaries of what confectionery has always been.
